Strawberry Solo Mini Loafs

Ingredients 50g SOLO strawberry powder 100g SR Flour 1/2 tsp bicarbonate of soda 1/2 tsp vanilla extract  75g dairy free/vegan spread 150ml nut milk/DF milk 3 large strawberries finely chopped   Method Preheat your oven to 170c (fan) Grease some mini loaf tins/brownie tin Mix all of the dry ingredients together into a food processor and mix Add nut milk, vanilla and 2/3 of the strawberries and blitz Melt the spread and add mixing well until a smooth batter is formed.  Drain off any excess juice and fold in the rest of the strawberries Pour into your tins and bake for 20-25 mins

Ingredients  150g SR flour 100g SOLO Chocolate 10g cocoa powder 8g baking powder 2 flax eggs 250ml nut milk (add water if needed)  Vegan chocolate chips   Method Add all the dry ingredients and mix Add the nut milk and mix thoroughly until it forms a batter. (Add water if needed) Mix in with a spoon With a small, greased, 6” pan on a medium heat, pour in some mix and cover.  Throw some of your favourite vegan toppings on and enjoy
