Protein Pancake Stack

INGREDIENTS 
Pancake Mix:
♡ 1 tsp coconut oil
♡ 40g Unflavoured Solo
♡ 1 large very ripe banana
♡ ⅛ tsp cinnamon
♡ ¼ tsp baking powder
♡ ¼ tsp salt
♡ 50ml plant based milk 
♡ 2 eggs/2 tsp egg replacer

Toppings:
♡ Banana
♡ Berries
♡ Honey
♡ Chocolate
♡ Mini Marshmallows

METHOD
1. Gently mix in the banana with all other ingredients (apart from oil) and fold until everything is well combined.
3. Heat the oil in small pan over low heat. Scoop ¼ of the mixture into the pan and cook for 60-90 seconds on each side.
4. Stack with toppings.
