Solo Vegan Carrot, Orange and Apple Mini Cakes

Ingredients (makes 9 cakes):
  • 150g plain flour
  • 65g coconut nectar (or maple)
  • pinch salt
  • 30g Vegan Vitalite butter (softened)
  • 39g Vanilla Solo 
  • 1 tsp Cinnamon
  • 1 tsp Ginger 
  • 1 tsp bicarbonate of soda
  • 225g Chunky Apple Sauce
  • 80g Grated Carrots
  • 1 tsp orange extract
  • 40ml freshly squeezed orange juice
  • 1/2 Grated orange zest
  • Optional: 20g icing sugar


  1. Preheat oven to 350F / 180C/ Gas 4.
  2. Line a cupcake tin with cases
  3. Cream the Vitalite butter with the coconut nectar in a large bowl
  4. Then add all the other ingredients in the bowl and mix well with a big spoon 
  5. Poor the cake batter into your cupcake cases, dividing by 9 
  6. Bake for 24 mins 
  7. Allow to cool for 10 mins before removing and placing on a wire rack to cool completely
  8. Dust lightly with icing sugar
