Solo Vegan Carrot, Orange and Apple Mini Cakes

Ingredients (makes 9 cakes): 150g plain flour 65g coconut nectar (or maple) pinch salt 30g Vegan Vitalite butter (softened) 39g Vanilla Solo  1 tsp Cinnamon 1 tsp Ginger  1 tsp bicarbonate of soda 225g Chunky Apple Sauce 80g Grated Carrots 1 tsp orange extract 40ml freshly squeezed orange juice 1/2 Grated orange zest Optional: 20g icing sugar Method: Preheat oven to 350F / 180C/ Gas 4.
